Problems with the Breadman Sent: 10 September 2008 We're just in the process of returning the Breadman to Amazon or Russell Hobbs. We've had it for approx. 8 months and it's been making lovely healthy bread. However, the mechanism for holding the bread tin doesn't work now (2 metal prongs at either side of the bread tin), so when it's kneading, the bread tin now lifts up and rides on top of the rotating base so it doesn't get kneaded. Now I can see the problem with it I can't even see how a direct replacement would satisfy the problem in the long term. I would prefer a refund or a similar Russell Hobbs with a totally different fixing system.
Breadman Healthy Options. Sent: 22 January 2007 The Breadman pro which I had previously was better engineered and absolutely reliable, till the electronic panel died.
1 The 12683 does not seem to operate well with the 1lb size recipe on the card provided. I used the rapid setting. After a number of trials I could only get the smallest size loaf with a tried and trusted recipe from elsewhere. I manually shaped the dough ball across the tin before rising began. Result - a perfect 1lb loaf but, with intervention.
2 The 1.5lb setting for white bread seems more successful. Some uneven colouration on sides of loaf, therefore, dark crust not recommended.
3 Rapid setting is about 2 hours or more depending on size of loaf and crust chosen.
4 Packet machine bread, rye with seeds 1.5lb loaf worked out but, evidence of unmixed product around the finished loaf. Heavier dough may need a bit of help with a rubber spatula. This is a loaf made on a full length programe of around 3 hours. (Not unusual)
5 I do not like the individual wipe down recipe cards. I can see where they could be practical but there is a lot to be said for a book or booklet where you can place markers for favourite recipes and easily find them again. Finding a bread recipe with this system is like filtering through a deck of cards. I have tended to leave notes in between some recipe pages in a book, either on what worked, or didn't, corrective measures that worked, variations on themes and so on. You can't do that with the cards.
6 The 'healthy options' relates to the variety of recipes offered with the cards that come with the machine. What is missing is the healthy option of making bagels. This machine doesn't do it, my previous machine could. As for all the other recipes on offer, my tried and trusted book, available for years, has given me those recipes and more. I am not likely to be as adventurous with this machine as I was with the last one.
